Paneer-moong salad

This is a refreshing and very easy to make salad recipe. Prepare this simple and healthy recipe for lunch or dinner with the readily available items in your kitchen. Along with the sprouted moong I have added paneer cubes, baby corns, bread crumbs and apple which increases the protein value of this dish and makes it a complete meal.

Ingredients-
1) 1 cup sprouted moong
2) 2 baby corns - These 2 ingredients should be boiled or steamed to make it a bit tender. I have steamed it in pressure cooker for 1 whistle.
3) 3/4 cup paneer cubes shallow fried in butter or oil
4) 1/2 cup apple (with skin) cut into small cubes
5) 1 medium sized tomato (deseeded) and cut vertically
6) 3/4  cup bread crumbs (I used 2 bread slices, cut into small cubes and deep fried in oil)



Recipe-

Mix all the ingredients together in a bowl. Make sure to drain excess water after steaming moong.

For dressing-
1) 1/2 cup fresh cream
2) 1/4 cup lime juice
3) Salt and pepper as per taste

Grind all of these through a blender, pour it over the salad bowl and mix well.

Keep the salad bowl in refrigerator for half an hour before serving.
