Vegetable Cutlets

I was running out of options yesterday as what to make for evening snack. Checked the refrigerator and noticed that there were few french beans and carrots and some other veggies in small quantities. So I started with boiling them first and in no time tasty cutlets were ready!
I made these after a long time yesterday and it was well liked by my child as well :-)

Ingredients-
1) 2 medium sized potatoes
2) Other vegetables like cabbage, capsicum, carrots, french beans approx 2 cups
3) 1 tbsp ginger paste
4) 1 tbsp garlic paste
5) Rawa, maida and rice or ragi flour for binding
6) Sesame seeds- 1 tsp
7) Salt and red chili powder as per taste
8) Oil for frying

Recipe-

1) Boil all the vegetables till they are soft

2) Take out excess water and mash them together along with ginger, garlic paste, rawa, maida and rice flour (I used ragi flour to make it more nutritious). Add sesame seeds, salt and red chili powder.

3) Heat oil in a pan. Take small ball of this mixture between your palms and give different shapes or make small tikkis. Then roll over the tikkis on rawa/bread crumbs so they get coated with it from both the sides.

4) Once the oil is hot enough, deep fry till golden brown.

Enjoy with a cup of tea :-)
