You can actually make this cake in less than 20 minutes. All you need is a pack of bourbon biscuits, milk and baking powder. This is a no-fuss recipe and one doesn't have to be a baking expert for making the same. I tried this recipe in a kadhai instead of a microwave. So no need of a microwave also.
Ingredients-
* 1 pack of bourbon biscuits. I have used around 12 to 14 biscuits.
* 1 cup milk
* 1 tsp baking powder
* 1tsp Vanilla Essence (optional)
Recipe-
* First of all keep a kadhai on medium flame for pre-heating. No need to add anything just the kadhai and cover it with a plate.
* Now break the biscuits into small pieces and run it through a grinder to make a fine powder.
* Add 1/2 cup of milk and mix well. Add baking powder and vanilla essence, if using. If you want the cake to be a bit more sweet add 2 tsp of sugar otherwise the sweetness of biscuits is enough as such.
* Add remaining 1/2 cup of milk and mix again.
* Prepare a cake tin by greasing oil/butter and pour the cake mixture into it. Tap it 3-4 times so that the mixture is evenly spread. Now carefully keep the cake tin in pre-heated kadhai and cover it with a plate. Make sure the tin is only 3/4 th filled and not more than that. Also the cover on the kadhai should be such that there is a space in between the tin and cover.
* Let it remain on low heat for 10 minutes. Check after 10 minutes by inserting a toothpick/knife in middle of cake. If it comes out clean that means the cake is ready otherwise let it bake for 3-4 minutes more.
* Take out the tin from the kadhai. Cake should be removed from tin only after its cooled down completely. If its doesn't come out easily then turn the tin upside down and tap on the bottom of tin.
Super soft bourbon cake is ready 😄
