Cajun Potatoes

Cajun potatoes is a speciality of Barbecue restaurants these days. I believe most of us have tasted these in one or the other barque speciality restaurants. And it is indeed loved by both vegetarians and non-vegetarians.  The name sounds complicated but recipe is way too easy 😄
After my first barbecue special recipe yesterday I had this on my to-do list and when a friend asked for it, I made no delay in preparing it 😊





Ingredients-

* 3 to 4 potatoes OR 7 to 8 baby potatoes.

* Maynonise - 3 to 4 tbsp

* 2 tbsp milk or 1 tbsp fresh cream

* 1/2 cup chopped onion

* 1 tbsp Oregano seasoning

* 1 tbsp chili flakes

* 2 tbsp red chili powder/paprika

* 2 tbsp cumin powder

* 1tbsp black pepper powder

* 1 tbsp cajun spice mix

* 2 tbsp butter

* Salt as per taste


Recipe-

* Wash the potatoes thoroughly and cut into half. We have to retain the skin after boiling so a good wash is recommended.

* While the potatoes are being boiled, prepare the sauce by mixing mayonnaise, milk/cream, oregano seasoning, chili flakes, cumin powder (1tbsp), red chili powder (1tbsp) salt, black pepper powder, cajun spice mix and onion. Mix it thoroughly so that all the spices are blended together.





* Once the potatoes are boiled and cooled down press each piece between your palms. You can make smaller pieces as well by mashing just a little bit. But do no use knife or cut it. We do want the uneven pieces of it.

* Take 2 tbsp butter in a pan and fry these potatoes till it turn brownish from both sides. Add salt and remaining cumin and red chilli powder while frying.

* Once done let it cool down a bit and then put the mayo mixture over it. You can either mix it so all potatoes get coated by it or may prefer to put a spoonful of mixture over each potato. I have seen different serving styles in different restaurants.





* Serve it the way you want and relish it 😋
