I had so much corn stored in my fridge but was bored of eating the corn salad or corn tikkis. So tried out this super easy crispy corn recipe which most of us must have eaten at restaurants. If you have corn kernels ready at home this would take no time to prepare. You can even make it when guests arrive. A lot of variations can be made to it while seasoning. So lets see how to make it.
Ingredients-
* Sweet Corn- 2 cups
* Corn flour or Rice flour- 2 tbsp. I have used rice flour because I was out of corn flour and trust me there is no difference in the taste.
* Salt -1tsp
* Chat Masala-1tsp
* Red Chili powder-1/2 tsp
* Chopped coriander for garnishing
* Water
* Oil for frying
Note- You can add other ingredients like chopped onion, tomato, spring onion as well depending on the way you want to present it.
Recipe-
* Boil 4 cups of water in a pan. Once it starts boiling add corns and let it boil for 3-4 minutes. Add a pinch of salt while boiling.
* Take it out in a sieve so that the water drain out. Let it come to room temperature.
* Add corn flour/rice flour with another pinch of salt and mix well so that corns are coated with flour.
* Now heat oil in a wok. Once hot enough drop in the corn slowly and let it fry on medium flame for 3-4 minutes, flip around so its fried from all sides. You will notice it turns brown in color.
* Take out on an absorbent paper.
* Mix well red chili powder, salt and chat masala and sprinkle it on fried crispy corn. Mix again and garnish with coriander leaves. Here you may also add onion, tomatoes, sev, spring onion etc to make a more bhel-puri kind of version 😀
And the crispy corn is ready to be served 😋
