Let's start the new year with some healthy food ;-) This salad gets ready in no time. I have used home made sprouted moong because personally I believe this is healthy and hygienic. Moong is low calorie and loaded with fibre and vitamins. Apple is also full of fibre and Vitamin C and is a no fat - no cholesterol fruit.
Moong can be substituted by moth(matki) as well or you can use a mix of both.
Ingredients-
1) Sprouted Moong- 1-1/2 cup
2) 2 slices of apple cut into small pieces
3) 1 small onion finely chopped
4) 1/2 tomato finely chopped
5) Coriander leaves finely chopped
6) 1 tbsp olive oil
7) Salt and pepper as per taste
Recipe-
Mix sprouted moong, apple, onion, tomato and coriander leaves in a bowl and mix well.
In another bowl, take olive oil, salt and pepper and whisk well. Pour this over the moong mixture and mix again.
