Veggies Stir fry

No better way to get the goodness and nutrition of all the veggies in one dish :) I have tried to include as much different vegetables as I can but still you can play around with it. I have also mixed little bit sauce with the veggies because I wanted a sweet and tangy taste. However the ones I have eaten in restaurants were mostly stir fried and served as side dish. But as I said, you can play around with the variety.


Ingredients-
1) Chopped vegetables like- broccoli, red and yellow bell peppers, capsicum, baby corn, carrot, red cabbage- 3/4 cup each


2) Finely chopped garlic cloves- 12-15
3) 1 onion chopped into medium pieces
4) Spring onion only white part  (optional)




5) Red chili sauce, soy sauce and tomato sauce- 1 tbsp each




6) Olive oil
7) Salt (optional) and pepper as per taste



Recipe-
1) Heat 2 tbsp oil in a non stick frying pan and add broccoli, carrots, baby corn. Keep stirring.



2) Now add capsicum and bell peppers, stir again. I want my veggies to be a bit more tender so I cover at this stage.



3) Open the lid in a minute and then add red cabbage, cover again.



4) In the mean time, lets get done with the sauce. In a sauce pan, heat 1 tbsp oil and add garlic and spring onion. Keep stirring. Don't let the garlic turn brown in color.






5) Add onion. Mix and stir.



6) In a small bowl, mix the sauces plus 1/2 cup water and pour it over the onions when it starts to turn translucent. Let it simmer for 2 minutes.



7) Pour this sauce over the veggies, mix well and cover.






8) Switch off the burner after 2 minutes. Sprinkle fresh grounded black pepper and salt (keep in mind that the sauces we added already contains salt).



Serve with fried rice or eat as a meal itself :)
