Chicken curry in groundnut masala

This is a quick and tasty chicken curry recipe with added flavour of fried groundnuts.

Ingredients:

1) 500 gm bone-in chicken. (Personally I like bone-in chicken but boneless chicken can also be used)
2) 4 medium-sized onions
3) 1 medium-sized tomato
4) 1/2 inch ginger grated
5) 12-15 garlic cloves
6) 2-4 green chillies, more if you want it more spicy
7) 3 tbsp curd
8) 2 tsp turmeric, chilli powder, cumin powder, coriander powder.
9) 1/2 cup fried peanuts.
10) 1-2 bay leaf, 2-3 cloves, 2 green cardamom, 1 star anise. This is totally optional. You can skip this if you don't like the aroma of khada masalas.
10) Salt and Oil as per taste and liking

Method:

1) First of all wash and clean the chicken thoroughly and put it in big wide bowl.
2) Next add curd, 1tsp each turmeric, chili powder, cumin powder, coriander powder and salt. Mix well and set aside for at-least 1 hour.

3) Now grind together onion, tomato, green chilli, ginger-garlic and groundnut and make a smooth paste. Water will not be needed while making paste because onions and tomato release water.


4) In a thick bottomed pan or a pressure pan, heat oil and add khada garam masala.


5) Stir it a bit and then add onion paste.


6) Keep stirring till the oil starts separating and add remaining dry spices except salt.



7) Add little water if the masala is burning.

8) Now add chicken and mix well, add 2 cups of water and salt.



Cook on high flame till the chicken is tender. If you are using pressure cooker then cook for 1 whistle and keep on low flame for 5 minutes, then switch off the burner. Chicken should be ready by then.




Enjoy with hot rotis or rice :-)
